Black Bean Soup

Black Bean Soup has quickly become a favorite in our home.  It’s easy, inexpensive and nutritious for your entire family.  Black bean soup is also very easy to make and is another Sunday go-to dish for me.

I begin a little prep work for this soup on Saturday.  When I get up on Saturday morning, I soak the beans.  (This helps reduce the chemical in the beans that causes gas).  On Saturday night before I go to bed, I prepare the ingredients and place everything in my slow cooker on low.  On Sunday morning, I prep my bread and place all of the ingredients in my Bread Maker and off we go to church.

When we return home, we have wonderful home-made bread and a delicious soup my entire family loves.

This recipe is not just great for Sunday.  It’s great for every day and it leaves plenty of left overs for at least one more meal.  The day after I serve this soup, I will cook some rice in the rice cooker and serve the bean soup over the rice.  Again, nutritious, easy to make and very affordable.

  • Soak beans the day before you make the soup
  • Drain beans and place them in Slow Cooker ith all ingredients
  • Cover with water or favorite broth
  • Cook on low for 6-8 hours

What do you enjoy making that is easy, nutritious and inexpensive?

  1. I never knew that about soaking the beans! I only did it to soften them. Didn’t realize the added benefit! Where do you get the soup mix?

  2. I too didn’t know that… Very interesting!
    Today is PERFECT for soup!

  3. Yumbo! I have a recipe which doesn’t call for rice but does add stewed tomatoes. It is like a soupy black bean chili when I get done with it ;-) I love your Sunday plan… I may sneak into your house sometime ;-)

  4. This looks delicious, and so much different than our riceless black bean soup. Can’t wait to try it. Thanks, Rebecca!

  5. I never knew that about soaking the beans. Wow. I love black beans and am definitely going to try this recipe. I love how you get it all ready and when you come home from church, the house is smelling wonderful. What a great idea! Thanks so much for linking up with “Try a New Recipe Tuesday.” It means a lot to have you join in! :-)
