Today, I am linking up with Adventures of Arbor Creek to share a new recipe. I don’t normally post recipes…because I never create my own…and sometimes I think people don’t want to see something on my blog they can find somewhere else. But, I “think my thinking” is wrong there and sometime, and I may share some of my favorite recipes created by other people. Until then…I am going to start here with something I created… Now, I have to admit, I was inspired by this YUMMY recipe by The Pioneer Woman. Have you ever visited her blog….it is amazing. She homeschools and creates the MOST amazingly yummy recipes ever! It’s not always healthy….but, definitely YUMMY!
Anyway, here goes….this is our new FAVORITE Chicken and Spinach Recipe:
(No measurements…make as much/little as you want)
- 4 (or more) Chicken Breasts
- White Wine/ White Cooking Wine
- Chicken Broth
- Flour (I recommend freshly milled red wheat for more flavor)
Make a Rue with your butter and flour. Add in your White Wine (Cooking Wine), a little chicken broth and then your Half/Half.
Satue Leeks in Sauce.
Cook your Chicken on both sides in your sauce.
When your chicken is no longer pink, add your spinach and then tomatoes…until they are slightly wilted.
That’s it….Place the chicken on your plate and arrange the spinach and tomatoes on top/around it.
Make a side of salad….another veggie and you have ONE YUMMY dinner!
OH, don’t forget your home made bread…..especially made with hard red wheat!
