Black Bean Soup has quickly become a favorite in our home. It’s easy, inexpensive and nutritious for your entire family. Black bean soup is also very easy to make and is another Sunday go-to dish for me.
I begin a little prep work for this soup on Saturday. When I get up on Saturday morning, I soak the beans. (This helps reduce the chemical in the beans that causes gas). On Saturday night before I go to bed, I prepare the ingredients and place everything in my slow cooker on low. On Sunday morning, I prep my bread and place all of the ingredients in my Bread Maker and off we go to church.
When we return home, we have wonderful home-made bread and a delicious soup my entire family loves.
This recipe is not just great for Sunday. It’s great for every day and it leaves plenty of left overs for at least one more meal. The day after I serve this soup, I will cook some rice in the rice cooker and serve the bean soup over the rice. Again, nutritious, easy to make and very affordable.
- Bob’s Red Mill Bountiful Black Bean Soup Mix
- 1 Chopped Onion
- 3 tbsp Coconut Oil
- 1 Bay Leaf
- 1 tsp Thyme
- 1 tsp Oregano
- Soak beans the day before you make the soup
- Drain beans and place them in Slow Cooker ith all ingredients
- Cover with water or favorite broth
- Cook on low for 6-8 hours
